eat in color: purple/blue

our series of eat-in-color (finding ways to enjoy naturally colorful foods within our day) continues with purple/blue foods! our task is to find a way to have a purple/blue food at every meal throughout the day, eventually leading up to eating a rainbow of foods all in one day.  have you been following our series?   1. I’m crazy about eggplant parmesan or even simpler, eggplant sautéed, topped with a tomato slice and mozzarella and broiled until the cheese melts. Anything with blueberries is going to work for me.
